I have four words for you Sticky Toffee Pudding Cake you need to try this! To some this cake brings back childhood memories of when they would go to their grandparents house to eat dinner and dessert was anticipated by all. For me this was a cake I had for dessert one night, after dinner with my husband for date night. At first I was reluctant to try it because I am a creature of habit. However after much thought I took the plunge and took a bite, I was left speechless! its was warm, moist and literally melted in my mouth. If you know me, when it comes to food I am always looking for ways to recreate them to make them my own and that is what I did with the Sticky Toffee Pudding Cake i’ve added a secret touch to this cake to make it even more delicious than I could ever imagine.

What is even more intriguing is the fact that it is made with Dates. Who knew these wonderfully delicious nutrient packed fruits could bring such happiness to ones palate. I wanted to share my recipe with you in hopes that you will take a chance and make this cake too. Once you do you will see just how good it is.

Prep Time: 25 minutes

Cook Time: 60 minutes

Total Time: 1 hour, 25 minutes

Sticky Toffee Pudding Cake

Ingredients

  • 2 cups roughly chopped pitted Dates
  • 1 tsp Baking Soda
  • 2 cups boiling water
  • 1 cup Kahlua Liqueur
  • 2 tablespoons butter- softened
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • Toffee Sauce
  • 1/2 cup half and half
  • 1 cup packed brown sugar
  • 3 tablespoons butter
  • 1 tsp teaspoon vanilla extract

Instructions

  1. Preheat Oven 350 degrees
  2. Soak dates in Kahlua liqueur
  3. Line a spring foam pan with parchment paper butter bottom of pan
  4. Place dates in a blender or food processor and pulse into crumbs or if using a blender add water and dates in blender and alternate between grind, and chop until smooth.
  5. add Baking Soda
  6. In a mixer add butter, brown sugar and eggs and mix until smooth fold in flour, baking powder, salt and date mixture until all is combined
  7. Pour batter into pan, distribute mixture for even baking
  8. Bake for 60 minutes or until cake pulls away from the sides of the pan
  9. Insert toothpick, check to see if its clean, if so remove from oven place on rack to cool for 10 minutes
  10. Preparing Toffee Sauce: Add butter, Sugar and milk together whisk until mixture has thickened allow to cool for 15 minutes before drizzling over Toffee Pudding Cake and enjoy

Notes

You can omit the Kahlua Liqueur
