Roasted Brussels Sprouts & Sweet Potato Chunks
and a Balsamic Parmesan Glaze
If you read my post on my Food Addicition then you know that I am on a journey to be more healthy, through exercise and better food choices. In order to do that, that I believe that Meal Prep is something that is essential for me. So far my journey has been smooth with a few bumps which is to be expected, but in order to stay on track I made a list of dishes that were easy to make, healthy and filling and from there compiled another list for the items that I would need, of ingredients so that I stuck to my budget. I decided to make Roasted Brussels Sprouts with Sweet Potato Chunks and a Balsamic Parmesan Glaze.
Its easy to make and you can make a big batch and store them in containers to eat throughout the week. What I love most about this meal is how filling and tasty it is. You have the option to eat it alone or as a side dish. Today I will be sharing this yummy recipe, so that you too can use it as an option to healthy eating. Or even during your next holiday meal.
Ingredients
Instructions
Preheat Oven to 400 F
In a bowl:
Combine Brussels sprouts, Sweet Potato Chunks with oil and spices
Line Cookie sheet with Parchment paper and spread on cookie sheet
Cook for 35 minutes or until golden brown and tender
In another bowl:
Mix Balsamic vinegar, Parmesan cheese and Stevia together and pour over Brussels Sprouts and Sweet Potato Chunk then place back into oven for 5 minutes
Serve and enjoy!

20/01/2016 at 2:13 pmSo weird! I mean, I LOVE! I am making the same thing as I type! Well, Almost. I love roasting butternut squash, brussels and cauliflower. I have a fab dressing I pour over them after. And sometimes I add in dried cranberries. I will have to try this out and switch things up! I love to roast up a bunch of veggies on a cold day and have them for the week.
