The best Beef with Broccoli Rice Bowl you will ever eat, the best part is?!? You can make it too!
Happy Hump Day! Its been such a busy and stressful week. Here at my house I am currently trying a new way of doing groceries and preparing meals. I didn’t think that it would be as difficult as it has been trying to decide on 14 meals over a 2 weeks period that didn’t repeat and meals that I could prepare using left over meat from the previous days of cooking. It really took alot of thought, many lists, and input from the ones eating it, My Family. Which still wasn’t much help because they don’t really care, they just want to get fed. So really I was on my own, I knew what they didn’t like or want but ultimately the rest was up to me.
So there I was with a pen and paper, my second empty cup of coffee and only the essential grocery items on the list like milk, eggs and water that normally appear each time we prepare for shopping. I chose to go back to this method of shopping for 2 reasons, one being its costs less especially if you have a large family and secondly because I am trying to eat healthy along with the family, so if I stick to a specific list and only pick up whats on it, it will leave less room for disappointment. I think this way of shopping is particularly helpful for families that are on a tighter budget. Now that all is said and done, 14 meals listed and saved and the groceries to execute tasty meals, my next item on the list was making them within 30 minutes.
Why you ask? because lets be practical here! many of us lead busy lives, kids are in school, parents that work full time, plus the extras like after school programs and traffic. No one wants to come home to spend an extra 2 hours or so cooking when all we want to do is relax after a long day outside or inside( if you work from home)
In today’s post I am sharing one of the meals that I made for my family. Let me tell you guys,when you make and the the family digs in they will LOVE IT! If you are a lover of chinese food then you are well aware of Beef with Broccoli. Its one of my favourite meals so I made my own Beef with Broccoli Rice Bowl in just under 30 minutes. What’s even better is most of the ingredients I already had ,so it saved me money and I was able to save some of the meat needed for another meal (tacos). I think that’s a win in my books.
